You'll need:
- 1 muffin tin
- non stick spray
- 1-2 baked potatoes
- 7 eggs
- dash of salt and pepper
- 1/8 cup milk
- 1/2 cup ham
- 1/2 cup cheese
Spray the muffin tin with non-stick spray. Slice the potatoes about a quarter-inch thick to make rounds. If I don't have left over baked potatoes I just microwave a couple of washed potatoes for 7 minutes. You can use a "potato bag" or prick them with a fork before microwaving.
While these are cooking I grated the cheese. Yum!
Lay a potato slice in the bottom of each muffin cup.
Sprinkle some ham and cheese on top of the potato slice.
Next crack the eggs into a 2 cup liquid measuring cup. Wisk the eggs with the milk and salt and pepper.
Divide the egg mixture between the muffin cups. I was making a double batch so I have two different muffin tins going.
Bake at 350 degrees for about 20 minutes or until set. Remove from muffin tin and enjoy warm. Top with salsa or ketchup or your favorite topping. Enjoy!
